Sweet Carrots

So we had a bag of carrots that had been in the refrigerator for over a week. I kept forgetting about them because I assumed they would get eaten raw. So I decided to boil them according to the bag’s instructions and then I discovered a nice little recipe on the back:

I have cornstarch, but I didn’t want to make it too gooey. I did not have any brown sugar, but I did have Sugar in the Raw. Hmm…


1 tbsp. butter

2 packets Sugar in the Raw (natural cane sugar)

1 package boiled carrots, drained

1 tsp. honey


In a large pot, bring water to a boil. Add raw baby carrots. Boil 10-12 minutes. Drain. In a skillet over medium heat, heat the butter and sugar, until butter is just melted and sugar is not as crusty. Toss with carrots. Drizzle the honey over the carrots.

Very good! Almost like dessert!
