Hummus Veggie Sandwich

I love Whisk’s Hummus & Avocado sandwich (which includes hummus, avocado, alfalfa sprouts, sliced tomato, red leaf lettuce, and thinly-sliced red onion), so I wanted to re-create one at home with the limited ingredients I had on hand. I also wanted crunchy bread, so I decided to experiment. Sadly, I did not have any avocado =(

For the bread:

With a basting brush, spread a light coating of olive oil over two slices of wheat bread. Sprinkle with salt, pepper, Italian seasoning, and garlic powder. Broil 5 minutes on each side until crunchy.

When the bread is done, spread 2 tbsp. hummus on one slice (on the crunchy seasoned side). Top with crumbled feta cheese, shredded carrots, and chopped scallions.

Then add thinly-sliced cucumbers and tomatoes over that. Finally, add the spinach and cover with the other slice (crunchy, broiled side down).

Serve with potato chips and Diet Snapple Peach Iced Tea!

I re-created the Whisk sandwich! (Without tomato)

First, LOTS of avocado.

Then, the rest of the ingredients! Tip: Don’t toast the bread too much. If you do, the avocado will slide right out.
