Mini Filet Medallions with Sweet Potatoes

This is an easy meal to make when you already have food for the evening but you need to make more for the next day. Leave the sweet potatoes in the oven while you are eating dinner.

Mini Filet Medallions

Slice the filets in half lengthwise. Season with salt, pepper, garlic powder, onion powder, yellow mustard, parsley, and Worcestershire sauce.

Heat a skillet to medium-high and drizzle some olive oil over it. Add the filets, cooking for about 5 minutes per side.

Baked Sweet Potatoes (sorry, no picture!)

Wash and scrub each sweet potato well under hot water. Pat dry. Wrap each potato in aluminum foil and place on top of a foil-lined cookie sheet. Bake at 400F for 1 hour or until potatoes give and feel soft when you squeeze them with an oven mitt.
