Got extra zucchini? This is a great side dish:
Slice the zucchini into 1/2-inch thick rounds.
Drizzle a skillet with olive oil and heat to medium. Add the zucchini, making sure it covers the skillet in one layer. Sprinkle with salt and pepper. Cook, turning often, for about 10 minutes, until zucchini is semi-soft.
I served it with Rib-Eye Steak and brown rice. Good stuff!
