Rice Krispies Treats!
I’ve made these a few times for my friend Neha when she barbeques at her house. For her birthday this year, I decided to go back to feeling like a first-grader and make some more. They are super easy!
- 4 tbsp. butter, cut into 3 pieces
- 8 cups Rice Krispies Cereal
- 1 16-oz. bag large marshmallows
On low heat, melt the butter, stirring often. Then add the marshmallows:
and stir until they melt. Note: It would have been much easier and faster to use the small marshmallows!
Once everything has melted, remove the pot from the heat. Add the cereal, mixing thoroughly (and quickly!). Transfer to a buttered dish (I like the large Pyrexes) and spread into an even layer. Allow it to cool for a few hours before cutting into squares.
The mixture can get VERY sticky very fast, so do it quickly! It is a bit of a pain to scrape out the pot once the cereal mixture has hardened, but getting to lick the spoon and any residue makes up for it!

Did they even make it to the BBQ? No! As soon as I brought them to her house the night before, a group of people dug in. I ate A LOT.
