Sweet Potato Fries

I love these! I got inspired to make some after eating the fantastic Grilled Harvest sandwich from Ms. Cheezious, an awesome food truck. They served it with crispy sweet potato fries. Both were amazing, and I wanted to re-create the fries without, well, frying them.

So, it went something like this:

I sliced the raw sweet potatoes (after washing them, of course) into strips. By the way, sweet potatoes are TOUGH to cut when they are raw!

Then, I sprayed some Pam on aluminum foil lined over a cookie sheet.

In a bowl, I tossed the sweet potato sticks with olive oil, salt, pepper, a bit of garlic powder, and parsley. I arranged them on the cookie sheet:

 

Then, I baked them at 400 for 45 minutes. Not quite as good as Ms. Cheezious’, but they were still pretty darn good!
