White Wine Chicken with Roasted Mushrooms and Squash

White Wine Chicken

This is an easy marinade:

Salt, pepper, garlic powder, Lea & Perrins’ Marinades For Chicken, white wine, dried basil, and dried parlsey.

Bake at 425F for 40 minutes (or 350F for 45-50 minutes).

Roasted Mushrooms and Squash

Wash and dry the vegetables. Cut the squash into chunks. In a separate bowl, mix together some white wine, olive oil, salt, pepper, and parsley. Stir well and add in the vegetables, turning to coat. Arrange in a cookie sheet and bake at 425F for 30 minutes.

Serve with pesto angel hair pasta. This is a great combo!
