Honey-Lime-Thyme Chicken

One word: WOW

I was surfing the web yesterday looking for different ways to make roasted chicken. I kept coming across combinations of honey, lime, and thyme. I had to try it!

Honey-Lime-Thyme Chicken

Directions: Wash and pat the chicken dry. Squeeze out the juice of 2 limes (I microwave them for 15 seconds to make them easier to squeeze) into a bowl. Add 4 tbsp. of honey and 1 tsp. dried thyme. Stir.

Wash another lime, scrubbing well. Prick the skin with a fork in 4 to 5 different places. Place the lime inside the chicken cavity.

Sprinkle the chicken with salt and pepper. Drizzle some olive oil over it. Then, pour the honey-lime-thyme mixture over the chicken. Try to pour some inside the cavity as well.

Bake at 375 for 2 hours.

Note: The skin will get very crispy and look black. Don’t worry, the chicken isn’t burning! The meat is very tender.
