Smashed Peas with Mint and Parsley

I’ve always heard of smashed peas and last night I felt like making them. I browsed online and found this one at Epicurious.

Here’s what I did:

I followed the directions on the frozen bag of peas, adding 1/3 cup water to the frozen peas in a pot and letting it boil. Then I reduced the heat to medium and covered the pot. I let it simmer for about 8 minutes and drained the peas.

With the back of a heavy beer mug, I smashed the peas in a bowl. I added 2 tbsp. of chopped fresh mint and 1 tsp. of dried parsley. I mixed it all together. In the same pot, I melted 1 tbsp. of butter over medium heat and added the pea mixture, stirring well.

It was interesting!

Apparently one downside to eating smashed peas is that it kind of takes the fun out of popping them yourself. I never thought about that. Oh well, I’m not sure I would make this EXACT recipe again, but at least I gave it a try!
