I wanted pancakes. When that happens, I make them, no matter what time of day. It was 3:30 PM. But I wanted something to ADD to the pancakes…
- Fiber One Pancake Mix (just add water)
- Ground Cinnamon
- 1 Frozen Banana, chopped into 1/2 in thick pieces
- 1 packet Sugar in the Raw
- 1 tbsp. butter
Melt the butter on medium heat in a skillet. Add the bananas and stir, breaking them into smaller chunks as they defrost. Add the sugar. Swirl around until it becomes mushy.
This sweet banana mush is perfect for topping your pancakes or adding it to the batter or skillet. I tried dropping it right into the skillet as the pancake was cooking:
But then I ended up just mixing it into the pancake batter.
