Roasted Brussels Sprouts

I’ve discovered a new love for vegetables here in Ohio. After a very busy June, moving from Florida to Ohio, and then getting married, I’m really looking forward to getting back into cooking. Here in Ohio they have Kroger, which is similar to Publix in South Florida. I used to go there in North Carolina during my first year of college. Anyway, I have been grilling and roasting lots of vegetables lately.

Here’s what I did to roast these brussels sprouts:

Preheat the oven to 400F. Wash the brussels sprouts and remove the ends. Pull off any leaves that are brown, yellow, or withered. Transfer the sprouts to a large Ziploc bag. Pour 1 tbsp olive oil into the bag, and sprinkle some salt and pepper in it. Seal the bag and shake it so that the sprouts are completely covered in the oil. Spread a sheet of aluminum foil over a baking sheet, spray it with Pam, and then scoop the sprouts onto the sheet. Bake for 30-40 minutes.

I cooked these for 25 minutes and found they were still tough. Try to cook them the entire time!
