Turkey meatballs with grilled eggplant

Turkey meatballs are extremely easy to make, and they taste great! This is a very simple dish, and you can add a bunch of other ingredients to the meatballs if you want, such as grated carrots, parsley, onion, etc. My husband likes them simple, so I kept it that way.

Ingredients:

1 pound ground turkey

1 tsp. – 1 tbsp. parsley flakes, depending on how much you want

1/4 cup breadcrumbs ( I use Italian)

1/8 tsp. garlic powder

1/8 tsp. onion powder

Salt and pepper, to taste

Directions:

Combine all ingredients in a bowl. Scoop out the mixture and form 1-inch diameter balls. Place in a Pyrex sprayed with Pam and bake on 400F for 25 minutes.

Serve with marinara sauce on angel hair pasta.

For the eggplant:

Wash the eggplant. Slice it into 1/2-inch thick rounds. On an indoor grill, turn the heat to high. Drizzle olive oil, salt, pepper, and garlic over the eggplant. Use a basting brush to coat the eggplant evenly with the oil mixture. Place on grill and cook about 3 minutes per side or until the eggplant is a bit soft.
