Cod with Lemon and Garlic Butter Sauce

I recently discovered cod, which can be cooked a ridiculous amount of ways. Here’s a great recipe I found online:

Ingredients:

  • 2-4 cloves of garlic, minced
  • 1/2 tsp butter
  • 1 tablespoon olive oil
  • Juice of 1 lemon
  • Parsley, fresh or dried
  • 2 cod filets

Directions:

Preheat oven to 400F. Place the cod in an ovenproof dish and season it with salt and pepper. Heat butter and olive oil in a skillet over low heat. Add the garlic and saute 1 minute. Add the lemon juice and parsley and continue to cook for 5 more minutes. When the sauce has finished cooking and has cooled a bit, drizzle it over the cod. Bake the cod for 12-14 minutes.
