Pork Chops with Orange-Soy Sauce

These are good!


  • 1 cup fresh OJ
  • 1 tbsp soy sauce
  • 2 cloves garlic, minced
  • ½ tsp dried thyme
  • 4 bone in pork chops, 1.5 to 1 ¾ pounds, trimmed
  • ¼ tsp salt, or to taste
  • pepper
  • 2 tsp canola oil


Preheat to 400F. Combine OJ, soy sauce, garlic, and thyme in small bowl. Set aside. Season pork with salt and pepper. Heat oil in large oven proof skillet, cast iron, over high heat. Add pork and sear chops until browned, 1-2 minutes per side. Transfer pan to oven and bake the chops until just cooked through, about 5 minutes. Transfer to plate and keep warm. Add reserved OJ mixture to pan. Cook over high heat until sauce is reduced by half, 3-5 minutes. Return chops to the skillet. Heat through, turning to coat. Serve with pan sauce.
