Red Potatoes with Sea Salt and Pepper

Easiest potatoes ever to make! You can use red potatoes for this recipe, or you can use the smaller fingerling potatoes too, without cutting them in half.

Directions:

Wash and scrub the red potatoes.

Slice the potatoes in half, then in half again, and then in half one more time. You want them to be in chunks that are about the size of a golf ball.

Place the potatoes in a bowl (or you can use a plastic bag for this). Drizzle about 1 tablespoon of olive oil over the potatoes, and sprinkle a generous amount of salt and freshly ground pepper on them. Toss the potatoes around so that they are entirely coated with the oil/salt/pepper mixture.

Transfer the potatoes to a cookie sheet lined with aluminum foil and sprayed with Pam. Arrange the potatoes so that they are in a single layer.

Bake at 400F for 30-35 minutes.
