Rockfish is a tasty white fish which can be substituted for cod or tilapia. It doesn’t break apart as much in the skillet, so it’s nice when you want a whole fillet of fish.
Wash rockfish and pat dry. Season with salt, pepper, and taco seasoning. Drizzle with lime juice. Heat skillet to medium and pour olive oil in to lightly coat it. Cook the fish 3-4 minutes per side, until thermometer registers 145F.
Serve with tortillas, black beans, rice, pico de gallo, and guacamole!
