- 8 slices baguette
- 1 T olive oil
- 1 halved garlic clove
- 3 ounces crumbled cotija or feta cheese
Heat grill to low. Brush baguettes on both sides with olive oil. Grill on one side until golden, 1 to 2 minutes. Rub halved garlic clove on grilled sides and top with crumbled cheese. Return to grill and cover. Grill until undersides of baguettes are golden and and cheese is soft, another 1 to 2 minutes. Drizzle with olive oil when finished.
