I am just obsessed with blueberries. Here’s another sauce recipe I found at Pinch of Yum. I’ll be trying this one on pancakes!
- 3 cups blueberries
- 1/2 cup sugar
- 1 cup water
- 1.5 tablespoons cornstarch, dissolved in 3 tablespoons water
- 1/2 teaspoon vanilla extract
Heat 1.5 cups blueberries in a small saucepan with water and sugar over medium-high until it comes to a low boil and the blueberries start breaking apart. Add the cornstarch mixture and bring the mixture to a rolling boil. Turn it down and let it simmer on low for 2-3 minutes. Add water if the sauce gets too thick, one tablespoon at a time. Remove from heat and add the rest of the blueberries. (I guess add the vanilla whenever)
